Why is that fast bikes are generally quicker than super cars around most UK circuits, but slower around the Nurburgring?

even in the UK bikes get toasted at the track.... the giant different is on the brake... cars start braking were bikes finished braking into a corner... through the corner cars can carry much higher speed and start acclerating sooner out of the turn... bikes have always the accleration advantage in the straight here is a Topgear direct track compare between a not so fast Porsche 996 Carrera 4S and a Yamaha R1... with two highly skilled race drivers ...even with a standing start and all the accleration advantage the bike lost a single lap race... http://vids.myspace.com/index.cfm?fuseaction=vids.individual&videoid=3894641
Still all depends on the track, look at the Sport Auto article.
5th gear also pitted a Ducati 999 against a Gallardo, where the Ducati also won on the track.

Bikes are fast because they accelerate fast.
Cars are fast because they corner fast. Get a lightweight car, and you get the acceleration to beat (or keep up and outcorner) a bike.

When Sport Auto tested the KTM X-Bow against the KTM 1190 RC8 superbike the RC8 turned out to be 0,4 seconds faster on Hockenheim short.

Why do you think bikes are faster in UK tracks? If you compare Ducati Desmosedici to a Golf GTi of course the bike will be faster but when you compare high end sportsbike to high end sportscar, the sports car should be faster. And pretty much all of the car vs bike tests prove it. Bikes have much better acceleration, cars have two extra wheels for much more grip (quicker cornering and braking) and extra power that results in higher top speed.
