I just feel like of all mainstream car manufacturers, VOLVO is probably the least talked about car company of ALL of them, and I cant find a good reason for it. I would like to hear everyones thought's or opinions as to why this is?

It or more correctly WAS a very long time ago a brand and manufacturer more associated with OAP'S. I'm sorry. Safety and reliability and build quality mattered to them. More than any sporting disposition.
Can't say more recently, don't follow them at all.
But the Volvo T5 and R did change that somewhat as did their entrance into the BTCC, and from memory they were successfully raced!

I still see good amount of them in my neck of the woods. I think it depends on your country.
Sales are probably declining because Volvo has had very difficult last few decades, changing owners several times. This damages trust in the brand. Now, apparently, its mostly or fully owned by Chinese company/companies.
