The GT500, in general, isn't a Mustang. It is actually a grand touring car, like Chevrolet's Camaro ZL1, Aston Martin's DBS, Bentley's Continental Supersports ISR, Audi's RS 5, BMW's M6, Mercedes-Benz's SLS AMG, etc. The Boss 302 is a pony car, though, like the Camaro SS 1LE and Z/28. :D

An interesting comparison. Since I am very familiar with the 5th generation platform (I used to own a 2011 Mustang GT, and my nephew allowed me to drive his 2009 Shelby GT500 when I visited him two years ago), I have some perspective.
In theory I would prefer the naturally aspirated track oriented Boss 302. However, the Boss 302 uses the Getrag MT-82 six speed manual (same as the one used by the Mustang GT), and it is not a durable transmission. The Tremec transmission in the GT500 is far more durable, and therefore I would choose the Shelby. Both cars suffer from a front heavy platform, and have difficulty putting power down out of corners. Both have great sounding, powerful engines, and poor fuel economy (one of the reasons I sold the 2011 was the excessive fuel it was using).

its quite obvious the GT500 is, but the Boss is a better package, you get very similial laptimes, and performance isn't that far off with a 200Bhp+ difference, Shelby is more interested in Power, where Ford Is more interested in overall.
And anybody who buys either of these cars, should not give to shites about Fuel consumption, They also fixed that Brake fade problem for 2014 on the GT500, And Ford can squeeze out more from a Boss, but they chose not too.
But if that's the case, Ford should bring back the REAL Boss....The 429..

So which is the ultimate mustang of 5th generation? before 6 coming out?
I heard that GT500 have some problems with brakes and it have really small gas tank. But sounds better.
Boss302 might be better at some points, but it do not work so good job on senses. Maybe its better track ready, but propably they could not squeeze much more from this archaic construction and suspension. Brake give up here too after some hard ride, alse ZL1 with Corvette parts eat it all around live.
But still imo thi car have more character than camaro, and new gen should be epic.
